It will save time in the kitchen and reduce washing-up. If you are after a dependable, comfortable meal, this is it. Mary’s casserole does rely on time to soften the vegetables and thicken the sauce, but most of the cooking is hands-off.
The sausages are browned then gently simmered with onions, vegetables, beans, tomatoes and stock. It results in a spoonable meal that is both hearty and balanced.
Start by heating the oil in a large casserole dish or deep pan with lid. Add the sausages and brown all over. Once cooked, remove and set aside.
In the same pan, add onion and carrots. Cook until softened.
Add the garlic and tomato puree. Stir briefly to release the flavour. Ensure it doesn’t burn.
Add the tinned tomatoes, herbs, bay leaf as well as the salt and pepper to taste.
Return the sausages to the pan and pour in the chicken stock.
Cover the pan and cook for 30 minutes. Stir occasionally.
Add the beans and cook uncovered for a further 15 to 20 minutes, until the sauce has thickened.
Serve as it is, or add a side of mashed potatoes, crusty bread or steamed green vegetables.
